Happy summer! I am so glad summer is finally here. My favorite thing about summer is the abundance of fruit. I get so burnt out on apples in the fall and winter, so when the bright, colorful fruits start popping up I get so excited. One of my favorite summer flavors is peach.

Happy Derby Day!!! Nothing like getting a Derby recipe up ON Derby Day! This is the third Derby themed dessert I tested before I finally got a successful recipe. But it doesn’t have to be Derby to enjoy these little guys!
I’ve lived in Boston for about 2 years now, and I just recently discovered that Marshmallow Fluff was invented here! Well…Somerville to be exact. And not only that, but there is an annual Fluff Festival, complete with a cooking contest!
Of course I had to enter, and I had so many flavor ideas! Eventually I settled on a sweet potato and maple bourbon dessert. The week before the recipe was due to the Festival, I got sick and knew I wasn’t going to be able to test recipes all week as planned. I considered not entering the contest, but ended up submitting a recipe at the last minute. I didn’t win, but I am so glad I didn’t bail on the contest, and I am thrilled with how this dessert turned out! A little bit of southern and a little bit of Massachusetts: sweet potato cupcakes with a marshmallow ganache and maple bourbon marshmallow frosting!
