Blackberry Lime Donut

Did you know there is a National Donut (doughnut??) Day?! I’ve always said chocolate chip cookies are my biggest weakness, but donuts are a very close second.  Donuts have really stepped up their game in recent years, with amazing flavors, toppings, sauces, glazes, you name it!  Anyway, today happens to be that very special day.  NATIONAL DONUT DAY!  So I made a donut.

I have this hilarious “As Seen On TV” giant donut pan.  As you can see, I really invested in it. I couldn’t not use this for National Donut Day.

Even though I live in the land of Dunkin’ Donuts now, I’m way more into Krispy Kreme donuts.  Give me a hot donut sign any day of the week! There are no Krispy Kremes in Boston, but there are some really amazing local donut shops with really unique flavors that are so on point.  One of my absolute favorite donuts in Boston is from Union Square Donuts. It is a vegan blackberry basil lime donut and it is heavenly.

That donut inspired this recipe, though my recipe is not vegan. Also, my recipe does not have basil.  I’m going to be very honest with you here. I tried to add the basil. And failed miserably. So my non-vegan blackberry basil lime donut became a blackberry lime donut.  I must say, still delicious!

Because this pan creates two separate sides of the donut that get put together to create a large donut, I needed to make a filling to hold the two sides together so I went with a blackberry lime buttercream.  I then covered the donut with a simply glaze, and topped it with a blackberry lime royal icing, adapted from Brown Eyed Baker‘s Royal Icing recipe.

If you don’t have this giant donut pan, GET ONE.  But also, just use a regular donut pan. And make sure you celebrate National Donut Day, because 364 days…till the next donut day.

Instructions
Donut
  1. Preheat the oven to 350 F. Spray donut pan with nonstick spray.
  2. Combine flour, sugar, baking powder, and salt in a mixing bowl.
  3. Combine milk, lemon juice, vanilla, eggs, and melted butter in a measuring cup.
  4. Slightly beat the egg mixture.
  5. Pour the liquid into the mixing bowl and mix until just combined. Be sure to get all the flour off the bottom of the bowl!
  6. Bake for 30 minutes, until a toothpick inserted into the center of the dough comes out clean.
  7. Cool completely.
Blackberry Lime Buttercream filling
  1. Combine all ingredients in a mixing bowl and beat until desired texture.
  2. Spread onto the center of the donut and then place the two sides of the donut together.
Glaze
  1. Combine ingredients in bowl and stir. If the glaze is too thick, add more milk until desired consistency.
  2. Drizzle all over donut.
Blackberry Lime Topping
  1. Combine all but the last two ingredients and mix (one step above "stir" on the mixer) until the mixture is no longer shiny, at least 10 minutes. (I hope you have a stand mixer!)
  2. Put into a baggie and seal. Cut off the corner of the bag and pipe the outline of the frosting on top of the donut. (Fun tip: the best way to put the icing in a baggie is to put the baggie in a glass)
  3. Put remaining frosting back in mixing bowl, add last two ingredients, mixing again for a couple minutes.
  4. Put back into baggie (or get a new baggie) and pipe inside the lines of your outline. Use a toothpick to spread the filler icing two the edges of the outline.

    OH MY GOSH! I need that donut pan. Pretty please!! Also…I made two blackberry lime recipes this weekend so I am in love with this donut!! I’ll have to settle baking them in normal pans. How sad!

      I think they’ll be just as delicious in normal pans! You probably don’t need the filler icing for a normal size donut. I need to invest in a normal pan, but for now I’ll just keep making giant donuts!
