One of my favorite things in cold, snowy weather is chai. It’s so comforting and warm and delicious! I only started drinking coffee in recent years, so a chai was my coffee shop go-to for the longest time. When we were first relocating to Boston and did not yet have internet in the apartment, I spent a lot of time at a local coffee shop in my neighborhood drinking chai after chai while working. That coffee shop has the best chai: it’s so light and foamy and delicious!

I wanted to create a chai dessert that resembled those traits: light, fluffy, and delicious! I think this recipe achieves exactly that. I made these as mini loaves in a loaf pan, but you could also make one large loaf with this recipe. I am a huge fan of the mini loaf pan as I think mini loaves make perfect gifts, and chai is the perfect flavor for a winter loaf!

Instructions
Spray loaf pan with non-stick spray or line with non-stick foil.

Beat butter and sugar until fluffy.
Add eggs and mix till combined
Add tea and mix till combined.
Add baking soda, baking powder, and salt and mix in.
Add flour and mix until just combined.
Divide batter evenly among the nine mini loaves and bake for 20-30 minutes, until a knife or toothpick inserted into the center of the center loaf comes out clean.
Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
Recipe Notes
This can also be made as a single loaf, but cook time will be increased.
