Better Than Box Mix Brownies

I finally found it.  My whole entire life I did not think it was possible to make brownies from scratch that taste better than brownies from a box mix.  Box mix brownies are so ooey and gooey and fudgy and just plain perfect.  I also happen to be particularly good at making box mix brownies.  They’re one of the best things I make.

The problem is, when I want to bring a dessert to a gathering, or enter into a bake-off, I don’t want to bring something made from a box! And then, of course, when I do, people rave about how delicious the brownies are and ask for the recipe.  Awkwaaaaarddddd.

It’s been an ongoing internal debate over whether to pretend I made the brownies from scratch, or fess up to being the baker that makes her brownies from a box.  Until now.  I have finally developed the perfect ooey, gooey, chewy, fudgy brownies.  And they’re just as easy as the box, but now you can {honestly} tell people you made them from scratch!

All you need is a bowl and a spatula. (You know I try hard to limit dish usage!)  If you think you don’t have the skills to bake from scratch, this is the recipe for you! Also if you want to make the best brownies you’ve ever tasted, this is the recipe for you!

Instructions
  1. Preheat the oven to 350 F. Line a 9x13 pan with non-stick foil.
  2. Heat milk and butter in a microwaveable-safe mixing bowl for 1-2 minutes, till butter is melted and milk is hot.
  3. Add cocoa powder and oil to the hot milk and melted butter and stir till well combined.
  4. Mix in eggs and egg yolks.
  5. Stir in sugar.
  6. Add in flour, salt, and espresso powder until combined.
  7. If using chocolate chips, stir in now.
  8. Pour the mixture into the lined pan and bake for 20-30 minutes, until a toothpick inserted into the center comes out clean.
  9. Let cool and cut into squares.
