Irish Coffee Cake

When we lived in Louisville, the St. Patrick’s Day parade day was one of my favorite days of the year.  It seems like everyone in the city comes out for that parade. And to make it even more fun, it usually coincides with March Madness basketball, which is such a big deal in Louisville.  Here in Boston, the parade is much larger, usually much colder, and I hear it’s a bit rowdier. I have yet to attend a Boston St. Patrick’s Day parade, but it seems like quite the event!

When I was brainstorming St. Patrick’s Day recipe ideas, I thought about the staples of St. Patrick’s Day celebrations: alcohol and all green everything!  My initial plan was something with Guinness, but I’ve been seeing so many Guinness recipes, so I went back to the drawing board.  The go-to for green is mint, but mint isn’t really a St. Patrick’s day flavor. I eventually settled on Irish coffee.

Irish coffee.  Coffee with Irish Whiskey, sugar, and whipped cream.  Add a little Bailey’s and you’ve got the perfect St. Patrick’s Day treat! My first attempts at getting this recipe right were total failures.  Like to the point that I was ready to give up on this recipe.  But instead of continuing to tweak a failing recipe, I decided to scrap the recipe and start completely over.  And of course, while I was trying out my new recipe, I forgot to add in the eggs! So I added them in at the end and hoped for the best. And it worked!  The cake is so sweet and the coffee flavor really pops.  The whipped cream is the perfect light addition that’s not too sweet or too heavy with the cake.  And the flavors all blend so perfectly!

This recipe turned out better than I imagined (just in time for St. Patrick’s Day…like, I finished it an hour ago…).  And it’s easy enough that even though it’s almost time to start celebrating, you’ll be able to have this recipe ready in time for your celebrations!  Happy St. Patrick’s Day!!!

Instructions
Irish Coffee Cake
  1. Preheat oven to 350 F. Grease 2 round cake pans.
  2. Beat butter, sugars, salt, and baking powder till well blended.
  3. Add the whiskey to the coffee.
  4. Alternate adding flour and coffee/whiskey until all is incorporated.
  5. Add eggs one at a time, beating till combined.
  6. Pour half the batter into each greased cake pan (it will not be very deep in the pan).
  7. Bake for 20 minutes.
  8. Remove from oven and cool in pan for 10 minutes before transferring to wire racks to cool completely.
Bailey's Whipped Cream
  1. While the cake is cooling, put all whipped cream ingredients in a bowl and beat until stiff peaks form.
  2. When cake has fully cooled, spread approximately half the whipped cream on the top of one of the layers of cake. Place the other layer on top of the whipped cream. Spread the remaining half of the whipped cream on top of the second layer.
  3. Sprinkle with green sprinkles, because it is St. Patrick's Day after all!

    I went to a Louisville game a few weeks ago here in Cuse. Great basketball team 🙂 I love the sound of this cake. So simple with great flavors.

      How fun! They are a lot of fun to watch. I was in Syracuse for a few hours a couple weeks ago. I’ll have to take you out for coffee next time I’m there!

      I was working on this cake when I read your Whiskey Caramel Cake post and you inspired me to keep going till I got this one right!

    yeah, i definitely don’t see as many irish coffee flavored things out there, so it sounds like you made a good decision (: and i love swiss meringue buttercream, but sometimes whipped cream just works best!

      Thanks! I was trying to go with a flavor I don’t see too much. And whipped cream is definitely the way to go here, but I do love a good buttercream!
