  1. Put gelatin and first 1/2 cup of water into the mixing bowl of a stand mixer with the whisk attachment and set aside.
  2. Heat sugar, corn syrup, salt, and the other 1/2 cup water in a small to medium pot, covered over medium-high heat for approximately 4 minutes.
  3. Uncover and continue heating until mixture reaches 240 F. This could take 10 minutes or more.
  4. Remove from heat.
  5. Begin beating the gelatin mixture with the whisk attachment of the mixer and very slowly pour in the syrup mixture.
  6. Beat for an additional 12 minutes.
  7. Add in lemon extract and lavender, and beat for another minute.
  8. In a separate small bowl, combine powdered sugar and cornstarch.
  9. Spray an 8×8 pan with nonstick spray, and coat with approximately half of the powdered sugar/cornstarch mixture.
  10. Pour mixture into the pan and spread evenly with a greased spatula.
  11. Sprinkle most of the remainder of the powdered sugar/cornstarch mixture over top and let sit for 4 hours.
  12. Cut into cubes with a greased knife. Coat the sides of each cube with the powdered sugar/cornstarch mix and enjoy!
