Piña Colada Upside Down Cupcakes

Pina Colada Upside Down Cupcakes

Here in Boston we’re expecting our third nor’easter in a row this week. The first one was all rain, the next one was a few inches of snow, so who knows what to expect this week! BEST.  Unfortunately, the timing of Easter often coincides with Passover and the Passover dietary laws prohibit Easter candy…okay, not specifically Easter candy, but corn syrup is a no-no. Not only can you not eat it, but you can’t even have it in your house.

so thick!
