I’m a sucker for anything maple. Living in New England I am constantly enticed by various maple items from lattes to meats to donuts. And I’ve tried them all! And they’re almost always delicious. But the go to maple is, of course, maple syrup, which is the perfect breakfast condiment. I’ve lived in Boston for about 2 years now, and I just recently discovered that Marshmallow Fluff was invented here! Well…Somerville to be exact. And not only that, but there is an annual Fluff Festival, complete with a cooking contest!
Of course I had to enter, and I had so many flavor ideas! Eventually I settled on a sweet potato and maple bourbon dessert. The week before the recipe was due to the Festival, I got sick and knew I wasn’t going to be able to test recipes all week as planned. I considered not entering the contest, but ended up submitting a recipe at the last minute. I didn’t win, but I am so glad I didn’t bail on the contest, and I am thrilled with how this dessert turned out! A little bit of southern and a little bit of Massachusetts: sweet potato cupcakes with a marshmallow ganache and maple bourbon marshmallow frosting!
