Meringues

Meringues are such a delicious, light, and fluffy treat! They’re so easy to make and only need 4 ingredients! There are just two tricky parts about meringues. One is the weather. I know this sounds weird, but it’s true. If it’s too humid out they will come out chewy. But honestly, even the chewy ones taste good! The other tricky part is adding the sugar. You have to add it very slowly to keep them light and airy. Like a cloud!

Flourless Chocolate Red Wine Cake

During Passover, I always find myself eating more dessert than usual.  While often the food is less exciting (except at Seders, of course, because my mom is an amazing cook), the desserts are always good.  Honestly, I fell in love with those Manischewitz boxed cakes when I was in college.  I liked them so much, I would eat them even after Passover had ended.  And they were small enough that I would always eat them in 1-2 sittings! But my absolute favorite Passover dessert has always been my mom’s chocolate chip meringue cookies.  I always eat so many of them.  I just can’t bring myself to stop.  They are so good. Passover Cookie Cake

A lot of the people nearest and dearest to me have April birthdays.  When April birthdays fall on Passover, it’s particularly difficult to get creative.  Flourless chocolate cake and meringues seem to be fairly consistent desserts during Passover (though, real talk, those Passover boxed cake mixes are legit).  So when I saw that Molly Yeh would be posting a recipe for a chocolate chip cookie cake that is Kosher for Passover, I was over the moon excited to give it a go!
