Guinness Black Currant Cupcakes

I’ve never been much of a beer drinker. I just don’t care for the bitterness. I’ve also never been to Ireland, though I’m dying to go! I’ve heard from many friends who have visited that Guinness from the source itself tastes so much better than the Guinness they serve in the U.S. Because Guinness is particularly bitter, an acquired taste, it’s apparently also common for college kids and tourists to add black currant juice to the beer to make it more palatable.

St. Patrick’s Day Treats

A bar made out of lucky charms and bailey's marshmallows on a round white plate

When I lived in Louisville, the St. Patrick’s Day parade was one of my favorite days of the year.  Since moving to Boston, though, I have avoided the parade.  I hear it gets a bit rowdy in Southie! But the chaos of the celebrations doesn’t keep me from making a delicious themed dessert every year! And you know I love a good theme!  Two years ago I made this to-die-for Irish Coffee Cake with Irish whiskey, and last year I made these super fun Pots O’ Gold with Guinness.  I decided to change it up again this year to make these insanely easy St. Patrick’s Day treats! They’re like a Rice Krispie treat, but instead of Rice Krispies, they use Lucky Charms, and instead of marshmallows, you make a homemade Bailey’s fluff! Continue Reading

Pots O’ Gold

Pot O' Gold Guinness brownie pots with caramel Irish Whiskey gold mousse

Well, they say March comes in like a lion, and it sure does! That Nor’easter hit Boston hard.  We didn’t get any snow here, but we got a lot of rain and wind and there was a lot of flooding.  I’m holding out hope that it only goes up from here.  March means it’s almost spring. March also means it’s time to start thinking about St. Patrick’s Day and I’m super excited about this recipe. This is a super easy recipe for Pots o’ Gold.

Cakes, Drunk

Irish Coffee Cake

When we lived in Louisville, the St. Patrick’s Day parade day was one of my favorite days of the year.  It seems like everyone in the city comes out for that parade. And to make it even more fun, it usually coincides with March Madness basketball, which is such a big deal in Louisville.  Here in Boston, the parade is much larger, usually much colder, and I hear it’s a bit rowdier. I have yet to attend a Boston St. Patrick’s Day parade, but it seems like quite the event!
