Blackberry Lime Donut

Ingredients

Donut

  • 2 cups flour
  • ¾ cups sugar
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt Diamond Crystal
  • ¾ cup milk
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 tablespoons butter melted and slightly cooled

Blackberry Lime Buttercream filling

  • ½ stick butter
  • 1 cup powdered sugar
  • 1 tablespoon pureed blackberries
  • 1 teaspoon lime juice

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk

Blackberry Lime Topping

  • 1 ¼ cup powdered sugar
  • 1 tablespoon dried egg whites
  • 1 tablespoon pureed blackberries
  • 1 teaspoon lime juice
  • 1 tablespoon pureed blackberries This will be added after the frosting is outlined
  • 1 teaspoon lime zest This will be added after the frosting is outlined

Instructions

Donut

  • Preheat the oven to 350 F. Spray donut pan with nonstick spray.
  • Combine flour, sugar, baking powder, and salt in a mixing bowl.
  • Combine milk, lemon juice, vanilla, eggs, and melted butter in a measuring cup.
  • Slightly beat the egg mixture.
  • Pour the liquid into the mixing bowl and mix until just combined. Be sure to get all the flour off the bottom of the bowl!
  • Bake for 30 minutes, until a toothpick inserted into the center of the dough comes out clean.
  • Cool completely.

Blackberry Lime Buttercream filling

  • Combine all ingredients in a mixing bowl and beat until desired texture.
  • Spread onto the center of the donut and then place the two sides of the donut together.

Glaze

  • Combine ingredients in bowl and stir. If the glaze is too thick, add more milk until desired consistency.
  • Drizzle all over donut.

Blackberry Lime Topping

  • Combine all but the last two ingredients and mix (one step above "stir" on the mixer) until the mixture is no longer shiny, at least 10 minutes. (I hope you have a stand mixer!)
  • Put into a baggie and seal. Cut off the corner of the bag and pipe the outline of the frosting on top of the donut. (Fun tip: the best way to put the icing in a baggie is to put the baggie in a glass)
  • Put remaining frosting back in mixing bowl, add last two ingredients, mixing again for a couple minutes.
  • Put back into baggie (or get a new baggie) and pipe inside the lines of your outline. Use a toothpick to spread the filler icing two the edges of the outline.
