Preheat oven to 375 F and line an 8x8 baking dish with parchment paper.
In a large microwave safe bowl, melt marshmallow and butter in 30 second increments until stirred smooth.
Add the remaining ingredients to the melted marshmallow and stir till well combined.
Press the mixture into lined baking dish.
Sprinkle desired amount of additional coconut on top.
Bake for 10 minutes till coconut is lightly toasted.
Cool and cut into squares.
