Mint Chocolate Chip Fudge

Inspired by the classic ice cream flavor, this fudge is the perfect combo of mint and chocolate

Equipment

  • 8x8 pan
  • Saucepan
  • Heat-proof mixing bowl
  • handheld mixer if you have one; if not, a spoon or spatula will work

Ingredients

  • 7 oz container Marshmallow Fluff about 2 cups
  • 12 oz mint chocolate chips
  • 1 ½ cups sugar
  • ¾ cups cream
  • 1 ½ sticks butter
  • ½ teaspoon Kosher salt Diamond Crystal

Instructions

  • Line an 8×8 pan with wax paper, wax side up.
  • Place chips and Marshmallow Fluff into a heat-proof mixing bowl and set aside.
  • In a large saucepan over medium-high heat combine sugar, cream, butter, and salt.
  • Bring to a boil and boil for 5 minutes, stirring constantly.
  • Pour the hot mixture over the marshmallow and chips.
  • Beat with electric mixer until smooth.
  • Pour into lined pan.
  • Refrigerate for 4 hours, then cut into cubes and serve.

Notes

After pouring the hot mixture over the chips and Fluff, let it sit for a few minutes to melt before beating. This will create a smoother mixture.
If you want to give your fudge the coloring of mint chocolate chip ice cream, separate your chocolate chips from your mint chips and follow the instructions dividing the ingredients between the two different chips. Then layer or swirl the two mixtures when adding them to the pan.
