Butterscotch Blondies

Last weekend I ran a 5 mile race.  I never considered myself to be a runner, and I am by no means a fast runner.  But I ran this race at a much faster pace than my standard pace, and I was very proud of myself.

After the race I went to breakfast with my dear, sweet friends, who are constantly motivating and inspiring me, and we stopped at a Starbucks for coffees.  My friend convinced me that I had to try the smoked butterscotch latte.  I had been intrigued by this menu item, but had never been able to bring myself to try it.  I agreed that this was the morning to try it.  YOU GUYS. If you haven’t had this drink go to Starbucks right now and get it.  It is so good.

Since I’ve already made a hot chocolate dessert and a chai dessert, why not take some inspiration from another coffee shop drink?! You can find butterscotch sauce with the ice cream toppings at the grocery, but I made a double batch of this recipe from Smitten Kitchen and it turned out great! These blondies are so soft and chewy, and the chips add just the right amount of sweetness and the perfect crunch.

  1. Preheat oven to 375 F and line a 9x13 pan with non-stick foil.
  2. Combine butter and sugar.
  3. Beat eggs and butterscotch sauce into the sugar mixture.
  4. Add flour, baking soda, and salt, and mix until smooth.
  5. Fold in the butterscotch chips.
  6. Spread mixture into lined pan and bake 25-30 minutes, until a toothpick inserted into the center comes out clean. The batter is a similar color to the toothpick, so look closely!
  7. Cool completely, then cut into squares.
