Hot Cocoa Pie

My parents got me a Tasty calendar for Hanukkah which includes not only the usual holidays, but it also tells me about all those fun food holidays we see on social media! I’ve been using these holidays as inspiration for my 2020 recipe planning, so you’ll see a lot of my recipes this year inspired by these food holidays. As it turns out, January 23 is National Pie Day (not to be confused with Pi day in March). So what better pie to have for a cold, snowy, probably dreary January day than Hot Cocoa pie?!

Hot cocoa is such a comforting and delicious flavor, and can really brighten up those winter blues. This pie is super easy to make, and doesn’t even need to be baked (though the crust does bake for just a few minutes). You make a super simple crust (or you could buy a chocolate graham cracker crumb crust and it would still be great), pour in the filling, toss it in the fridge, and then sit on your couch and relax!

I topped the pie with marshmallows and then toasted them a bit, but whipped cream is a super easy and delicious alternative, and meringue would be sublime! I’ve been eating this pie every night since I made it and I just can’t get enough! So whether you’re celebrating National Pie Day, or just need something delicious to get you through these cold, dreary months, I guarantee this pie will do the trick! Instructions
Hot Cocoa Pie Crust
  1. Preheat oven to 350* F. Grease a 9" pie dish.
  2. Combine dry crust ingredients in a small bowl.
  3. Stir in melted butter, until dry ingredients are evenly moistened.
  4. Press crust into the pie dish, spreading evenly around the bottom of the pan and up the sides.
  5. Bake for 5 minutes. Remove from oven and let cool.
Hot Cocoa Pie Filling
  1. Place egg yolks in a small bowl.
  2. Combine sugar, cornstarch, and hot cocoa in a medium saucepan. Add water.
  3. Place over medium heat, stirring constantly until mixture boils. The mixture will start to look glossy and feel thicker. Once boiling, continue stirring for 1 minute.
  4. Pour approximately half the mixture into the egg yolks, and stir till combined.
  5. Pour egg yolk mixture back into saucepan and place back on the burner. Continue stirring while boiling for an additional 2 minutes.
  6. Remove from heat and stir in butter until fully melted.
  7. Pour mixture into cooled crust. Let cool, then refrigerate for a few hours until chilled.
  8. Top with your topping of choice (or no topping at all!), slice, and enjoy!
