Red Wine Chocolate Bombs

I know a lot of people hate Valentine’s Day or think it’s a made-up holiday, but it’s one of my absolute favorites.  I find myself defending it year after year as one of the best holidays. Aside from the delicious candy, what’s better than an added excuse to tell people how much you love them? Growing up, Valentine’s Day was the holiday where my mom would hide cards and gifts all over the house and all throughout our stuff so we would find cards and candy all day long.  It was the best.  It’s a tradition I’ve tried to carry on (as best as it can be in our tiny downtown apartment).

I’ve also always preferred to avoid the crowds and long waits at restaurants and make dinner together at home.  It’s a fun way to spend time together, plus it’s cold in February and now I can stay cozy inside and still have a delicious meal.  Even though it’s fun to cook together, I still prefer to spend more time enjoying the meal we’ve made than putting in work in the kitchen.  So here I have for you a delicious and romantic dessert that takes almost no time at all! You can make this dessert when you’re done with your meal and have the dessert in less than 30 minutes.  This isn’t one you’ll want to make in advance because it’s best served straight from the oven.

I always thought lava cakes seemed super intimidating, but I had no idea how easy they can be until I made these.  And when you combine the rich, luxurious chocolate with a fruity and velvety red wine, the filling that flows from the cake is absolutely romantic and divine. I highly recommend putting this on your Valentine’s Day menu to impress your partner, and quite honestly, to impress yourself!

Instructions
  1. Preheat oven to 425 F. Spray 4 ramekins with non-stick spray and place ramekins on a cookie sheet.
  2. Melt butter and chocolate in a medium saucepan over low heat, whisking frequently until smooth. Remove from heat once butter and chocolate is melted.
  3. Stir in powdered sugar completely.
  4. Add eggs and yolks and whisk till combined.
  5. Stir in wine and then flour.
  6. Pour into ramkins and bake for about 12 minutes, until sides are firm and center is soft.
  7. Let stand for 1 minute, then carefully (ramekins will be HOT!) flip out onto plates.
  8. Add a scoop of ice cream and enjoy!
