Ingredients and Notes

Canned Peaches - This recipe uses three 15-oz cans of peaches in 100% juice. Be sure to drain the cans before dumping them into the baking dish to avoid a soggy cobbler.
These Peach Cupcakes are also made with canned peaches for year-round summer vibes!
Brown Sugar - Brown sugar is used in every layer of this simple homemade peach cobbler. We add it to the peaches directly for an added depth of flavor, we add it to the cake mix to give it a little extra sweetness, and we top the cobbler with it to give the crust the perfect crunch!
Boxed Cake Mix - This tasty treat uses a 15.25 oz box of store-bought boxed cake mix for the topping, keeping the recipe as simple as possible. Different brands of cake mix come in slightly different sizes, but they're usually close enough to work fine in this recipe. Do not prepare the cake batter in accordance with the instructions on the box. We are simply using the dry cake mix as an ingredient.
See the recipe card below for full information on ingredients.
Substitutions & Variations
Canned Peaches - You can use peaches in syrup or peach pie filling, but you may need to reduce the brown sugar a bit to account for the added sweetness from the syrup. I would suggest doing this reduction from the layer that goes directly on top of the peaches. Removing the brown sugar from the other layers will also reduce the crispness of the topping.
Boxed Cake Mix - I used yellow cake mix here, but white cake mix works great too! A spice cake mix can also add cozy fall vibes to this easy Peach Cobbler.
Spices - Feel free to play with the flavor of this Peach Cobbler by sprinkling spices over the canned peaches, such as 1-2 teaspoons of cinnamon. A bit of nutmeg also adds a cozy and delicious touch of flavor.

Peach Cobbler with Cake Mix Tips & Tricks
Tip #1: Use a fork to combine the yellow cake mix, melted butter, and brown sugar. It helps break up any big clumps into smaller pieces, allowing for more even distribution over the top of the cobbler.
Tip #2: Aside from combining the dry cake mix, butter, and brown sugar in a separate bowl, nothing in this Peach Cobbler with Canned Peaches should be mixed. Everything is dumped in layers into the baking dish, but is not stirred or combined. This helps to keep the topping crisp.
Tip #3: The cake mix Peach Cobbler will be very hot when it's first removed from the oven. Be sure to let it cool for at least 15 minutes. The peaches will remain quite hot, so use caution!
Tip #4: This Peach Cobbler with Canned Peaches and Cake Mix is best served warm, but is delicious at room temperature as well. If serving after a meal, it's perfect to put in the oven before sitting down to eat, and it will be ready to serve in an hour!
Recipe FAQs
This quick and easy southern treat is best served warm. It's delicious on its own, or served with a scoop of vanilla ice cream or a dollop of whipped cream (or both)!
When baking with fresh fruit, you usually want to use riper fruit because it's sweeter, so softer fruit is generally preferred when using fresh fruit. We keep this recipe extra easy by using canned peaches so ripeness and softness will not matter. Plus, canned peaches let us enjoy this simple summer treat year-round!
Cobblers usually have a dough-based topping. Crisps tend to have an oat-based topping. Both are crunchy and delicious!
We rarely have any leftovers in my home! But if you do have leftovers, they should be stored covered in the refrigerator for 3-4 days. Leftovers can be enjoyed cold, at room temperature, or reheated in the oven or microwave.
I would not suggest doubling this recipe. If you need more than one batch, I would make each batch individually in its own 9x13 baking dish.

I doubled the recipe. However, doubling the cake batter topping, it seems like it was raw and not done after cooking it over the 50 minutes. I actually, after trying it, put it back in the oven for another 30 minutes. I haven’t tried it again. The raw taste wasn’t good. Had it in a 13 x 9 pan. No idea what I did wrong.

I'm sorry this didn't work out for you! Unfortunately a 9x13 pan is far too small for the recipe to be doubled. The bake time on this recipe is based on a single batch of this recipe in a 9x13 so doubling it in the same size baking dish would significantly affect bake time. I would highly suggest making two separate batches in two separate 9x13 pans as opposed to doubling the recipe. I hope you'll try it again and let me know how it goes!
