I can't think of a better first blog post than chocolate chip cookies! Chocolate chip cookies are a classic treat, and they happen to be my favorite! For as long as I can remember, I have always made the exact same chocolate chip cookie recipe.  It has been my tried and true recipe. There was rarely a cookie I could find that I thought compared to my chewy chocolate chip cookies, but I decided I wanted to improve it.  I wanted to create the perfect chocolate chip cookie.

How to make Perfectly Chewy Chocolate Chip Cookies

I've tested and tested and tested.  I've tested this recipe more than 20 times. And I finally have it - the perfect recipe! This cookie is the texture that chocolate chip cookies should be.  So soft. So chewy. So delicious.  And the best part? They are so easy! All you need for this recipe is a mixing bowl and a spoon - no mixer required.

For another easy and delicious cookie recipe loaded with chocolate, try these Mini Egg Cookies!

A batch of chocolate chip cookies piled on a round plate.

You'll first stir together the melted butter, brown sugar, and powdered sugar. Next you'll stir in the egg, egg yolk, and vanilla. Then you'll add the flour, baking soda, baking powder, salt, and espresso powder.  And finally you'll stir in the chocolate chips.  I highly recommend rolling the balls of cookie dough in chopped chocolate before baking. This gives the cookies epic pools of chocolatey goodness!

After baking, cool the cookies on the baking sheet for 3-5 minutes and then move to a wire rack to cool completely. If you let them cool on the baking sheet for too long, you'll end up with flat cookies!

I hope you enjoy them as much as  I do.  I'd love to hear your thoughts!

I made this recipe with my 27 month old and while wearing my newborn. Super easy recipe. I am a baking novice and I’ve only done premixed or frozen dough. my son had a blast and it was a great learning experience of following directions and math. Can’t wait to make these again.

    Hi, I'm Liz!

I started creating my own recipes when I realized that baking blogs usually shared complicated and time-consuming recipes that needed a lot of kitchen equipment and a lot of ingredients. When my grandma mentioned that I should write a cookbook, that inspired me to turn my super simple recipes into a blog. As much as I love to make these super simple recipes for my friends and family, I also love being able to share them with you!
